  • 4 salmon fillets (approximately 6 ounces each)
  • 1/4 cup honey 
  • 2 tablespoons white miso paste
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons mirin seasoning
  • 3 cloves of garlic, crushed
  • Freshly ground black pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, combine the honey, white miso paste, soy sauce, rice wine vinegar, mirin seasoning, and crushed garlic. Stir until well combined.
  3. Place the salmon fillets on the prepared baking sheet, skin side down, and generously brush the honey miso glaze over each fillet, making sure to coat the salmon evenly. Reserve a small amount of glaze for later.
  4. Sprinkle some freshly ground black pepper over the salmon.
  5. Bake the salmon on the middle rack of your preheated oven for approximately 12-15 minutes or until the salmon is cooked to your desired doneness. The internal temperature should reach 145°F (63°C).
  6. While the salmon is baking, transfer the reserved glaze to a small saucepan and heat it over low heat, stirring occasionally until slightly thickened - about 2-3 minutes.
